Lot Hon.22-001-PAS: Cascaritas -Natural+Yeast Intenso

Cafe Parainema was hand selected and sorted.

The coffee cherry is initially floated to leave only the cherry of greater density and size. It is then drained and left to rest for 1 hour.

The fermentation process takes place in 200 liter plastic barrels for 30 hours to obtain part of the coffee mosto. Then the yeast inoculation is done, for this lot we use the Intenso yeast because we know this profile and the terroir from previous years. Since the acidity is very pronounced, we decided to experiment and the result was fantastic. The yeast brought out the floral notes we were looking for and made the sweetness more elegant and lighter.

The coffee was dried in African beds to ensure a slow and homogeneous drying.
